I loved chicken nuggets as a kid, and to this day I love to eat them; fond memories of a childhood spent climbing trees and riding my bike in the summer sun. I’ve cut my chicken breast into nugget-like chunks but you can also cut them into strips for tenders. These are oven baked to reduce fat content but you can pan fry if you desire.

1 Breast feeds two hungry kids
- 1 organic chicken breast
- ½ cup of panko
- 30g parmesan
- 1/8 teaspoon garlic powder
- 2 eggs, lightly beaten
- pinch of salt and pepper
- drizzle of oil
- Dust the chicken in the salt, pepper and garlic powder. Place eggs in a bowl. Combine panko and cheese in another bowl. Dip chicken in the egg and completely cover in breadcrumb mixture.
- Place baking paper on a baking tray and line up nuggets. Drizzle with olive oil and bake until cooked through, around 12 minutes.
